I’ve got a special treat for you today!!! These Groundhog Brownie Bites are the perfect treat for this all-to-often missed holiday! Life is all about having fun and if you’re going to have a holiday, then it might as well be celebrated!
These Groundhog Brownie Bites are the perfect treat for just that! They are easy to make and the kiddos can help in decorating them.
Here’s how you can make your own!
- 1 (18.3 ounce_ package of brownie mix (plus ingredients to make them)
- 1 cup of green frosting – THIS is the delicious buttercream frosting that I use, but you can get store-bought
- Teddy Graham cookies
- Brown sprinkles
Preheat your oven to 350 degrees and prepare a mini muffin pan with cupcake liners and spritz them lightly with cooking spray. Brownies tend to be a little more dense than cake, so this helps them come out a little easier.
Mix your brownie batter according to the package directions. Using a small scoop, pour approximately 1 tablespoon of batter into each mini muffin cup. Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out with moist crumbs attached. Cool brownie bites completely.
Pipe green frosting onto each brownie bite.
Insert a teddy graham into the icing.
Sprinkle with brown candy sprinkles just in front of the teddy graham.
