Busy mornings usually mean breakfasts lack flavor and nutrition! It’s so easy to grab on the go which is why this Easy Make Ahead Mexican Egg Sandwich is perfect!
I don’t think it really matters where you are in life, breakfasts seem to take the back burner when in actuality it should be the most important meal we consume. For me, the time I have to spend in the kitchen is slim and I need something that fuels me and my families bodies for the entirety of the day.
These Easy make Ahead Mexican Egg Sandwiches are perfect to put together on a down day so that they’re ready to grab and go.
Here’s what you’re going to need to make your own:
- 1 cup onion finely chopped
- 1 tsp minced garlic
- 1 medium red bell pepper diced (about 1 cup)
- 2 cups fresh baby spinach
- 12 eggs beaten
- ½ tsp sea salt
- ¼ tsp pepper
- ½ tsp Spanish Paprika
- ½ tsp Smoked Paprika
- 1 cup shredded cheddar cheese
- Fresh baby spinach as garnish
- Whole grain English muffins
Preheat oven to 350 degrees F.
Grease a 9×13” baking dish, set aside.
In a medium bowl, whisk together eggs.
Add sea salt and pepper and whisk to combine.
Pour the egg mixture into the prepared baking dish and spread the
mixture evenly in the dish.
Add the peppers, onions, spinach, garlic, and cheese.
Lightly toss to combine.
Bake in preheated oven for 25-30 minutes, or until top is set and
Cool for 5 minutes and serve warm.
Cut into squares and place in a toasted English muffin.
At this point, you can serve them or wrap them individually so they’re ready to heat up when you have another rushed morning!
