If you’ve been a reader for any length of time, I’m sure that you know I am a Mexican food lover! I love all the guac, cheese, salsa and chips! And let’s not forget that margarita’s that is a requirement with every Mexican dish. Every Tuesday is Taco Tuesday in my family.
This easy Mexican noodle dish is a family favorite! I have been making it for years and it is one recipe that never has leftovers since everyone likes it so much.
First, dice your onion and green pepper. If you want a little more kick to the dish, you can use a jalapeno in addition to the green pepper.
Second, brown your pasta in 2 tablespoons of oil. Add you cumin, garlic and salt and pepper.
After your noodles are slightly browned, add the diced tomatoes and water.
Add the cooked diced chicken and simmer on low for 10-15 minutes.
Lastly, chop one bunch of cilantro and stir in just before serving.
I promise that this Mexican noodle dish will become a family favorite in your household.
