We try to steer away from as many processed things as we can while at the same time, knowing how to keep meals quick and easy.

This enchilada casserole is one of my go-to recipes when I need a Mexican food fix. In all of the years that I have been making them, it never occurred to me that I could be making my own enchilada sauce! I mean, HELLO?!?!!!
Making your own enchilada sauce doesn’t have to be hard or time-consuming. You can make your own in 15 minutes with my recipe!
After making this easy enchilada sauce, you will never go back to using canned again. Even though you are using canned tomatoes, the flavor is much more intense when you add your own spices and seasonings. And that’s what makes a dish stand out from all the rest!
In a food processor or blender, liquefy the can of tomatoes.
In a small skillet, combine the blended tomatoes and all other ingredients. I use a chicken base but you can replace that with a chicken stock/broth of the same amount.
Bring to a slow bubble. Reduce to low and simmer for 10 minutes.
It really is that simple and the taste is out of this world. Delicious food can be on your table in the same amount of time that it takes delivery to arrive at your doorstep! Stop sacrificing good for you food thinking it will save you time. With a little bit of prep, you can double or triple this recipe and can it for later use.
