Sugar cookies are one of my favorite cookies! I love the simpleness of them in addition to them being so versatile. I love being able to roll out sugar cookie dough and create all kinds of designs with cookie cutters. There is just something satisfying about that to me.
These Blueberry Sugar Cookies with Lemon Icing will become your new favorite that takes just a short amount of time to make.
The secret? We’re not making these from scratch! I mean Betty Crocker has her cookie mixes mastered so why fix what isn’t broken!
Mix cookie batter according to package directions. At the very end, fold in fresh blueberries. Don’t overmix or you will break the berries turning your dough pink.
Drop by teaspoon full onto cookie sheet. We like “bigger” cookies in our household, so I use my large Pampered Chef scoop.
Bake according to directions and remove to a cooling rack.
While they are cooling, you can work on your icing. Using any store bought icing, microwave is slightly so it stirs easily. Once it’s a stirrable consistency, add some yellow food coloring and 2 teaspoons of lemon juice.
Using a small spatula, spread icing onto each cookie and add some sugar sprinkles onto the top.
The blueberries and slight lemon flavor in the icing of these cookies goes together perfectly! Let’s just say that they didn’t last long. I had to fight for some to even take pics.
