Insta-Pot Chicken Lo Mein

This Chicken Lo Mein made in your Insta-Pot is going to become your NEW favorite dish to make! It’s easy and quick and bursting with flavor!

I don’t know about you, but Chinese and Mexican are two of my favorite foods. I’ve mastered making some KILLER Mexican dishes but I’m still working on good Chinese dishes.

Let me tell you! This one is so INSANELY delicious that it is going to become a staple recipe in my house. Don’t forget about the fact that it uses an Insta-Pot!

I bought my hubby a Darth Vader Insta-Pot for Christmas since it’s no secret that he is the cook in the family. We’ve been trying out some new things and this Chicken Lo Mein was one. YUM!!!

Here’s what you need to make your own:

  • 1 tbsp sesame oil
  • 2 medium-sized boneless skinless chicken breasts, cut into 1 inch pieces
  • 2 cups mushrooms, sliced or quartered
  • 4 tbsp minced garlic
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 2 cups chicken broth
  • 1 lb fettuccine, broken in half
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 cup carrot matchsticks
  • 1 cup snow peas
  • ½ cup shredded cabbage

This recipe is so easy that I didn’t really take pics of the process. I mean who wants to see the ingredients just sitting in the bowl?

Add sesame oil, chicken, mushrooms, garlic, chicken broth, soy sauce,
hoisin sauce and fettuccine Instant Pot in that order.

Cook on high pressure for 4 minutes and then do a quick release of the pressure.

Mix cornstarch and water in a small bowl then pour into cooked noodles.

Break up noodles and toss to combine.

Add in carrot matchsticks and snow peas, gently mixing to combine.

Replace lid and let sit for 5-10 minutes.

Can I get a “YUM!” Seriously, I wish you could taste it now!
