Easy Funfetti Birthday Pancakes

Birthday’s are all about celebrating from sun up to sun down so why not start your day with these EASY Funfetti Birthday Pancakes!

As a mom, I’ve always tried to make birthdays with my kiddos and family special. Birthdays are special days which should be celebrated as such! We have many blessings around us and the joy of being able to celebrate another year is one to enjoyed!

We started a new tradition a couple years ago of letting the kids pick what they want for dinner when it’s their birthday. For breakfast though, I started making these Funfetti Birthday Pancakes! The boys love waking up to them and enjoying this sweet treat first thing in the morning.

You simply need a boxed cake mix and a few extra ingredients to make this fun and easy recipe.

Here’s how you can make your own:

  • Funfetti box cake mix
  • 1 1/3 cup all-purpose flour
  • 2 tsp baking pwder
  • 2 T sugar
  • 1 T homemade vanilla
  • 1/2 t salt
  • 1/3 cup vegetable oil
  • 3 eggs
  • 2 1/2 cups milk
  • 1/2 rainbow sprinkles – because you can never have too many of them!

In a large bowl or stand mixer, add all pancake ingredients and mix until smooth.

Heat your skillet or electric griddle to 300 degrees and spray with non-stick cooking spray. Drop 1/3 cup Funfetti Birthday Pancake batter onto heated griddle and cook for approximately one minute per side.

Serve pancakes warm with syrup drizzled over the top.

Add some candles to the top and let your birthday kid or spouse enjoy!
